| Eat Pretty: Strawberry Mousse |



Hello my lovelies, I hope you are having a great February so far!?! I know we just had a food post but, I made this randomly one day & since it was a hit in my house, I decided to share it here as well. It's so easy to make and you can make any adjustments you need to suit as well. I found the recipe on Pinterest and wasn't satisfied with some of the ingredients used, so I played around in the kitchen and made my own recipe, it has a lot less sugar than the found recipe. I used store bought jelly (jello) but, you could easily make your own from scratch to do away with even more sugar if you wanted, I might try and make my own when I have a bit more time. But, with the store bought jelly (jello) since it already has sugar in it, adding any more wasn't really needed.

This took me no time at all, I did start out whisking by hand but, as I needed to pick Lily up from school, I switched to a hand mixer and got it finished, assembled and in the fridge before leaving. I put mine in glasses just for aesthetics but, you can put this easily in a dish & then serve it in bowls or whatever you wish. When I tell you this didn't last long, it seriously didn't last long, my girls really enjoyed this, husband too even. In fact, it didn't last more than a day, as soon as they came home from school & work the next day, they were asking for it before dinner, haha. I enjoyed it as well, even though I usually prefer chocolate kinds of desserts. If you decided to make this, please let me know, tag me on social media or anything, I'd love to see. ~ To Make this Strawberry Mousse ~


Ingredients

6 oz pk. strawberry jelly (jello for US readers)

1 cup hot water

2 cups buttermilk

16 oz heavy whipping cream * see below

strawberries for garnish

mint for garnish (optional)


*whip by hand or with a mixer until thick and with peaks or until you can turn the bowl over & it doesn't come out - I added a 1 1/2 teaspoon of vanilla extract for added flavour. The original recipe called for cool whip but, that's an American product & it's also full of unhealthy additives/ingredients, so whipping heavy whipping cream is a better option, you can also find vegan/vegetarian & dairy free options to replace the heavy cream with as well*


Directions

In a mixing bowl, combine 6 oz of strawberry jelly and 1 cup of hot water. Whisk until jelly dissolves.

To the same bowl add 2 cups of buttermilk, whisk.

Add 16 oz. of the cream that you whipped beforehand, whisk until everything is combined.

Pour into the cups or into a baking dish. Place it in the refrigerator for at least 1 hour, best over night.

Garnish with strawberries & optional mint. Enjoy!

  1. I can see why this treat became a hit in your house. It looks delectable and your presentation in the pretty glasses certainly heightens the aesthetic appeal. As someone who doesn't eat sugar, I'm very excited to try this. We've been eating a lot of strawberries since they're in season and this would be a lovely way to enjoy them.
